• An Ancient Grape Variety: Coda di Volpe Rossa was traditionally planted in small quantities in vineyards due to its delicacy and lack of tannins.
• A Culinary Tradition: In the past, its clusters were hung near the kitchen fireplace and used in traditional dishes such as salt cod with escarole and pine nuts, or served as a natural Christmas treat for children.
• A Cherished Variety: Cantina Giardino first vinified this grape in 2005, producing just 400 bottles.
• Expanding Production: Over the years, it has been grafted onto vineyards less suited for Aglianico, allowing for increased production.
